In the work studies the process of dynamic crushing fruits and vegetables a spherical shape, the calculation of the basic parameters of the cutting authority and modes of grinding. Defines the parameters of the working body of the device in the production of lemon drink with pulp.

Лимон представляет собой ткани, образованные пространственной волокнистой системой, в полостях которой содержится жидкость. Для отражения картины поведения плодов лимона под нагрузкой выберем физическую модель, содержащую три последовательно соединенных элемента: элемента Е1 мгновенной упругости, элемента Е2 запаздывающей упругости, соединенного параллельно с элементом вязкости и элемента течения η1, соединенного с первыми двумя элементами последовательно [5-7].
